Ingredients
  

  • 2 cups cooked chicken shredded or diced (rotisserie works great!)
  • 4 slices bacon cooked and crumbled
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 4 cups mixed greens or romaine lettuce
  • ¼ cup red onion thinly sliced

For the Lemon Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

Prepare the Salad

  • In a large salad bowl, combine the cooked chicken, crumbled bacon, diced avocado, cherry tomatoes, cucumber, red onion, and mixed greens. Toss gently to combine.

Make the Lemon Vinaigrette

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.

Assemble the Salad

  • Drizzle the lemon vinaigrette over the salad and toss gently to coat all the ingredients evenly.

Serve

  • Serve immediately, garnished with extra crumbled bacon or avocado if desired.
