- 4 tbsp butter
- 1 small onion diced
- 3 cloves garlic minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 4 cups fresh broccoli florets chopped
- 1 large carrot shredded
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 cups shredded sharp cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 1 tsp Dijon mustard
Melt butter in a pot. Sauté onion for 3-4 minutes. Add garlic and cook 30 seconds.
Stir in flour and cook 1 minute. Slowly whisk in broth, milk, and cream.
Add broccoli, carrot, salt, pepper, smoked paprika, and garlic powder. Simmer 15-20 minutes.
Blend part of the soup for a smooth texture, or leave chunky.
Reduce heat to low and stir in cheddar cheese, Parmesan, and Dijon mustard until melted.
Serve hot with bread or crackers for dipping!
