- 2 lbs beef stew meat cubed
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 2 tbsp olive oil
- 3 cups beef broth
- 3 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 3 cloves garlic minced
- 4 carrots chopped
- 3 potatoes peeled and cubed
- 1 onion diced
- 2 celery stalks diced
- 1/2 cup frozen peas
- 2 tbsp cornstarch + 3 tbsp water optional thickener
Toss beef in flour, salt, pepper, and paprika. Sear in olive oil for 3-4 minutes per side. Transfer to crockpot.
Deglaze skillet with 1/2 cup beef broth, Worcestershire sauce, and tomato paste. Pour into crockpot.
Add veggies, garlic, herbs, and remaining broth. Stir.
Cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.
Stir in cornstarch slurry (if needed) during last 30 minutes. Add peas before serving.
Serve hot with crusty bread.
