Ingredients
  

  • 2 lbs beef stew meat cubed
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil
  • 3 cups beef broth
  • 3 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 3 cloves garlic minced
  • 4 carrots chopped
  • 3 potatoes peeled and cubed
  • 1 onion diced
  • 2 celery stalks diced
  • 1/2 cup frozen peas
  • 2 tbsp cornstarch + 3 tbsp water optional thickener

Instructions
 

  • Toss beef in flour, salt, pepper, and paprika. Sear in olive oil for 3-4 minutes per side. Transfer to crockpot.
  • Deglaze skillet with 1/2 cup beef broth, Worcestershire sauce, and tomato paste. Pour into crockpot.
  • Add veggies, garlic, herbs, and remaining broth. Stir.
  • Cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.
  • Stir in cornstarch slurry (if needed) during last 30 minutes. Add peas before serving.
  • Serve hot with crusty bread.
