Ingredients
  

For the Salad:

  • 2 cups cooked chicken shredded or diced (rotisserie chicken works great)
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • ½ cup red onion thinly sliced
  • 2 cups mixed greens or romaine lettuce

For the Dressing:

  • ¼ cup olive oil
  • 2 tbsp fresh lime juice about 1 lime
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

Prepare the Salad:

  • In a large salad bowl, combine the cooked chicken, diced avocado, cherry tomatoes, cucumber, red onion, and mixed greens. Toss gently to mix.

Make the Dressing:

  • In a small bowl, whisk together olive oil, lime juice, Dijon mustard, garlic, salt, and black pepper until well combined.

Assemble:

  • Drizzle the dressing over the salad and toss gently to coat all the ingredients.

Serve:

  • Garnish with fresh cilantro if desired. Serve immediately.
