- 1 pound ground beef
- 1 small onion finely diced
- 2 garlic cloves minced
- 2 cups beef broth
- 2 cups milk whole or 2%
- 2 cups elbow macaroni uncooked
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish, optional
Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is softened, about 5 minutes. Drain any excess fat.
Stir in the minced garlic, tomato paste, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 1 minute until fragrant.
Add the beef broth and milk, stirring to combine. Bring the mixture to a simmer.
Stir in the uncooked macaroni and cover the skillet with a lid. Reduce the heat to low and cook for 10-12 minutes, stirring occasionally, until the pasta is tender.
Remove the skillet from the heat and stir in the cheddar cheese and Parmesan cheese until melted and creamy.
