Ingredients
  

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 boneless skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 cup heavy cream
  • 1/2 cup shredded Parmesan cheese
  • Fresh parsley for garnish

Instructions
 

  • Heat butter and oil in a skillet. Season and sear chicken for 3-4 minutes per side. Set aside.
  • Sauté onion and garlic. Stir in rice, then add broth, thyme, and paprika. Nestle chicken into the skillet.
  • Cover and simmer for 18-20 minutes, until rice is tender.
  • Stir in heavy cream and Parmesan. Let sit for 5 minutes, then garnish and serve.
