- 2 tbsp butter
- 1 tbsp olive oil
- 4 boneless skinless chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 small onion diced
- 3 cloves garlic minced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- 1/2 cup heavy cream
- 1/2 cup shredded Parmesan cheese
- Fresh parsley for garnish
Heat butter and oil in a skillet. Season and sear chicken for 3-4 minutes per side. Set aside.
Sauté onion and garlic. Stir in rice, then add broth, thyme, and paprika. Nestle chicken into the skillet.
Cover and simmer for 18-20 minutes, until rice is tender.
Stir in heavy cream and Parmesan. Let sit for 5 minutes, then garnish and serve.
