- For the Tomato Soup:
- 2 tbsp butter
- 1 small onion diced
- 3 cloves garlic minced
- 2 tbsp tomato paste
- 1 28 oz can crushed tomatoes
- 2 cups vegetable broth
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika
- 1/2 cup heavy cream
- 2 tbsp grated Parmesan cheese
For the Grilled Cheese Dippers:
- 4 slices thick-cut bread
- 4 tbsp butter softened
- 1 1/2 cups shredded cheddar cheese
- 1/2 tsp garlic powder
Make the soup:
Sauté onion in butter. Add garlic and tomato paste; cook 1 minute. Stir in tomatoes, broth, and seasonings. Simmer 15-20 minutes.
Blend until smooth. Stir in heavy cream and Parmesan. Simmer 2 minutes.
Make the grilled cheese:
Butter bread slices and sprinkle with garlic powder. Fill with cheese.
Grill over medium heat 3-4 minutes per side until golden brown. Let rest, then cut into strips.
Serve soup hot with crispy grilled cheese dippers for dunking!
