- 2 tbsp butter
- 1 small onion diced
- 3 cloves garlic minced
- 3 carrots sliced
- 2 celery stalks diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried parsley
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups wide egg noodles
- 1 tbsp fresh lemon juice optional
- Fresh parsley for garnish optional
Melt butter in a large pot. Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook 30 seconds.
Pour in chicken broth, then add salt, pepper, thyme, and parsley. Simmer for 10 minutes.
Stir in shredded chicken and noodles. Simmer for 7-10 minutes, until noodles are tender.
Add lemon juice (if using) and adjust seasoning. Serve hot with fresh parsley.
