Ingredients
  

  • 2 tbsp butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups wide egg noodles
  • 1 tbsp fresh lemon juice optional
  • Fresh parsley for garnish optional

Instructions
 

  • Melt butter in a large pot. Sauté onion, carrots, and celery for 5 minutes. Add garlic and cook 30 seconds.
  • Pour in chicken broth, then add salt, pepper, thyme, and parsley. Simmer for 10 minutes.
  • Stir in shredded chicken and noodles. Simmer for 7-10 minutes, until noodles are tender.
  • Add lemon juice (if using) and adjust seasoning. Serve hot with fresh parsley.
