Keto Boursin Stuffed Chicken Breast

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 package 5.2 oz Boursin cheese (Garlic & Fine Herbs or your preferred flavor)
  • ½ cup shredded mozzarella cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese

Instructions
 

Prepare the Chicken:

  • Preheat your oven to 375°F (190°C).
  • Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to slice all the way through.

Make the Filling:

  • In a small mixing bowl, combine the Boursin cheese, mozzarella cheese, and fresh parsley. Mix until smooth.

Stuff the Chicken:

  • Divide the cheese mixture into four portions. Spoon the mixture into each chicken breast pocket and secure with toothpicks or kitchen twine to keep the filling inside.

Season the Chicken:

  • Rub the outside of each chicken breast with olive oil, then season with garlic powder, salt, and black pepper.

Cook the Chicken:

  • Oven-Only Method:
  • Place the stuffed chicken breasts in a greased baking dish. Sprinkle grated Parmesan cheese over the tops.
  • Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
  • Optional Sear and Bake Method:
  • Heat a skillet over medium-high heat and sear the chicken breasts for 2–3 minutes per side until golden. Transfer to a baking dish, sprinkle with Parmesan, and bake for 20–25 minutes.

Serve:

  • Remove toothpicks or twine before serving. Garnish with additional parsley and serve warm.
